Homemade Seasoning to rival any commercial mix. Infinately adjustble for heat and sweetness. Difficulty: Beginner
- Medium Mixing Bowl
- 2 tsp. Chili Powder
- 1 tsp. Paprika
- 1 tsp. Dried Oregano
- 1 tsp. Salt
- 1 tsp. Sugar - (Adjust for sweetness)
- ½ tsp. Ground Cumin
- ½ tsp. Garlic Powder
- ½ tsp. Onion Powder
- ⅛ tsp. Cayenne Pepper - (Adjust for heat)
- Mix all ingredients together and store in a sealed container.
Maintain the proportions of the spices and make as much as you need. The USUAL amount for Chicken or Beef Fajitas is about 2 to 3 Tbls. (Comparable to 1 to 1 1/4 Oz. in a commercial packet.) Adjust Cayenne Pepper for heat. Adjust Sugar for sweetness. To make Chicken or Beef Fajitas… Thinly slice the meat and cook to the desired doneness in a saucepan with a bit of EVOO. Sprinkle Seasoning on meat and stir to coat evenly. Add 1/4 cup Chicken/Beef stock or water to deglaze the pan. This will make a thin sauce. In a separate bowl, mix 1 Tbsp. Cornstarch to 1/4 cup Beef/Chicken Stock or water. Mix thoroughly to make a light slurry, then add to the meat. Simmer until the mixture reaches the desired thickness.
