Fajita Seasoning

Homemade Seasoning to rival any commercial mix. Infinately adjustble for heat and sweetness.

Equipment

  • Medium Mixing Bowl

INGREDIENTS 

  • 2 tsp. Chili Powder
  • 1 tsp. Paprika
  • 1 tsp. Dried Oregano
  • 1 tsp. Salt
  • 1 tsp. Sugar - (Adjust for sweetness)
  • ½ tsp. Ground Cumin
  • ½ tsp. Garlic Powder
  • ½ tsp. Onion Powder
  • tsp. Cayenne Pepper - (Adjust for heat)

INSTRUCTIONS

  • Mix all ingredients together and store in a sealed container.

Notes

Maintain the proportions of the spices and make as much as you need.
The USUAL amount for Chicken or Beef Fajitas is about 2 to 3 Tbls. (Comparable to 1 to 1 1/4 Oz. in a commercial packet.)
Adjust Cayenne Pepper for heat.
Adjust Sugar for sweetness.
To make Chicken or Beef Fajitas… Thinly slice the meat and cook to the desired doneness in a saucepan with a bit of EVOO.  Sprinkle Seasoning on meat and stir to coat evenly.   Add 1/4 cup Chicken/Beef stock or water to deglaze the pan. This will make a thin sauce.  In a separate bowl,  mix 1 Tbsp. Cornstarch to 1/4 cup Beef/Chicken Stock or water.  Mix thoroughly to make a light slurry, then add to the meat.  Simmer until the mixture reaches the desired thickness.
