Polish Kopytka

Kopytka are traditional potato dumplings. Soft and chewy, they can be enjoyed with toppings like butter, sour cream, or a meat sauce.

Equipment

  • Large Mixing Bowl
  • Large Soup Pot

INGREDIENTS 

  • 3 Potatoes - Large – starchy
  • 1 Egg - Large
  • 1 ½ cup AP Flour
  • Salt - to taste
  • 2 tablespoons Salted butter

INSTRUCTIONS

  • Peel the potatoes, boil until tender, and then mash. Allow to cool completely before using.
  • Whip the egg and then combine it into the mashed potatoes with a pinch of salt.
  • Gradually add flour, starting with one cup, and mix until the dough begins to form. Add more flour as needed until the dough is soft but not sticky.
  • Turn the dough out onto a floured surface. Divide it into sections and roll each into a long, thin rope about 3/4" in diameter. Cut the ropes into 1" long pieces.
  • Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook until they float, about 2-3 minutes.
  • Remove the dumplings with a slotted spoon and drain well. Serve immediately with your choice of topping, such as melted butter, a sprinkle of salt, or a hearty meat sauce.
  • Optionally, Fry the dumplings in 2 Tbsp. of salted butter, until crispy.

Notes

These dumplings freeze well.  Lay them individually on a baking sheet and place in the freezer. Then transfer to a bag or container for long-term storage.
