INGREDIENTS
- 3 Potatoes - Large – starchy
- 1 Egg - Large
- 1 ½ cup AP Flour
- Salt - to taste
- 2 tablespoons Salted butter
INSTRUCTIONS
- Peel the potatoes, boil until tender, and then mash. Allow to cool completely before using.
- Whip the egg and then combine it into the mashed potatoes with a pinch of salt.
- Gradually add flour, starting with one cup, and mix until the dough begins to form. Add more flour as needed until the dough is soft but not sticky.
- Turn the dough out onto a floured surface. Divide it into sections and roll each into a long, thin rope about 3/4" in diameter. Cut the ropes into 1" long pieces.
- Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook until they float, about 2-3 minutes.
- Remove the dumplings with a slotted spoon and drain well. Serve immediately with your choice of topping, such as melted butter, a sprinkle of salt, or a hearty meat sauce.
- Optionally, Fry the dumplings in 2 Tbsp. of salted butter, until crispy.
Notes
These dumplings freeze well. Lay them individually on a baking sheet and place in the freezer. Then transfer to a bag or container for long-term storage.
