Pasta e Fagioli

This soup is an Olive Garden look-alike. Loaded with fresh veggies, beans, ground beef, seasonings, and ditalini pasta, it's perfect for a cold winter day.

Equipment

  • Large Soup Pot
  • Medium Bowl for Pasta

INGREDIENTS 

  • 1 Lb. Hamburger
  • 1 tsp. Kosher Salt
  • ¼ tsp. White Pepper
  • ½ cup Onion
  • 3 cloves Grlic
  • ¾ cup Carrots
  • 1 cup Celery
  • 1 can V-8 Juice - 11.5 oz.
  • 1 can Tomatoes – Petite Diced - 14.5 oz.
  • 1 can Tomato Sauce - 15 oz.
  • 1 cup Water - more if desired to thin
  • 1 can Great Northern - 15 oz.
  • 1 can Kidney Beans - 15 oz.
  • 1 Tbsp. Red Wine Vinegar
  • 2 tsp. Italian Seasoning
  • 1-1 ½ cups Ditalini Pasta - uncooked
  • Grated Parmesan Cheese and fresh Basil for serving - (Optional)

INSTRUCTIONS

  • In a large pot over medium heat, brown hamburger. Add salt and pepper and stir until combined.
  • Add onions, garlic, carrots, and celery and sauté for 5 minutes.
  • Add V-8 juice, tomatoes, tomato sauce, water, beans, vinegar, and Italian seasoning. Simmer for 30 minutes on medium low, stirring occasionally.
  • In a separate pot, boil pasta until al dente, about 7 minutes. Do NOT over-cook.
  • Drain Pasta and combine with soup.
  • Serve hot in bowls. Add parmesan and fresh basil, if desired.

Notes

Adjust V8 or water to get your desired consistency.
Reduce pasta to 1 cup for fewer noodles.
