Kurací Paprikáš (Stove Top Chicken Paprikash)

Stove-top care-free Recipe for delicious fall-off-the-bone Chicken in true Hungarian style.

Equipment

  • Dutch Oven or Large Frying Pan

INGREDIENTS 

  • 6 Bone-in Chicken Legs &/or Thighs
  • 1 Onion finely chopped - large – finely chopped
  • 1 can Mushroom Pieces - 8 oz.
  • 1 can Tomato Paste - 6 oz.
  • 2 Tbs Oil
  • 1 tsp Salt
  • ½ tsp Pepper
  • 2 ½ Tbs Paprika - Smoked or Sweet
  • 2 Cups Heavy Cream - (Optional)

INSTRUCTIONS

  • Heat pot/pan with Oil.
  • Brown Chicken parts on all sides and remove from pot, covering with foil.
  • Add Onion, and Mushrooms to pot.
  • Sauté until Onions are translucent.
  • Add Tomato Paste, Paprika, Salt, and Pepper. Blend to meld flavors.
  • Place Chicken back in pot.
  • Add just enough water to cover Chicken and bring back to a simmer.
  • Cook until Chicken is cooked through (about 45 minutes). 165° F Internal Temp.
  • Water will decrease to about 1/4 of the original volume.
  • Add Heavy Cream and stir to combine. (Optional)
