Sandi’s Chili

This award-winning recipe is a favorite of our entire Community. Made with simple ingredients, it will warm you on a damp & rainy day or feed you while you watch your team win.

  • One Large Pot
  • Medium Skillet


  • 1 lb Ground Beef
  • 1 Onion - chopped
  • 4 cloves Garlic - minced
  • 1 Green Bell Pepper - seeded and chopped
  • 1 Red Bell Pepper - seeded and chopped
  • 2 cans Dark Red Kidney Beans (Optional) - 15.5 oz – (do not drain)
  • 1 can Whole Stewed Tomatoes - 28 oz. can (cut into chunks; do not drain)
  • 1 can Diced Tomatoes with Green Chilies - 10 oz. can (do not drain)
  • 1-1/2 tbsp Chili Powder
  • 1/2-1 tsp Salt - to taste
  • ½ tbsp Black Pepper - 1 tbsp if you really like your chili spicy!
  • ½ tsp Garlic Salt
  • 1 tbsp Dried Oregano
  • Cheddar Cheese (optional) - shredded


  • In a large pot, cook the Ground Beef over medium heat until evenly browned. Drain off grease, reserving a small amount to sauté the veggies.
  • Heat reserved grease in a skillet over medium heat. Sauté the Garlic, Onions, and Bell Peppers until Onions are translucent. Remove from heat. Transfer the Onion mixture to the pot with the Ground Beef, and set the heat to medium.
  • Add the Kidney Beans (Optional) and Tomatoes to the Beef mixture, and season with Chili Powder, Salt, Pepper, Garlic Salt, and Oregano. Bring to a simmer, and adjust seasonings to taste if necessary. Cover, reduce heat to low, and simmer for 1-2 hours, stirring occasionally.
  • Top each serving with shredded Cheddar Cheese.


Adding the Kidney Beans actually makes this “Chili con Carne” (literally, “Chili with Beans” in Spanish).  The Beans are not everyone’s favorite so we leave them out of batches made for our own table.

    Voted Best Chili at the annual Quarry’s Edge Community Chili Cookoff. Sandi entered two years running. First without Beans, and then WON the Second year WITH Bean, She retired with the Championship Trophy that year.
