Potatoes – Creamed

Old Fashioned Creamed Potatoes with a silky bechamel sauce brightened with a touch of lemon juice and nutmeg.

INGREDIENTS 

  • 2 lbs. Russet Potatoes - 4-5 medium
  • 2 Tbsp. AP Flour
  • 2 Tbsp. Butter
  • 1 cup Milk
  • ¼ cup Heavy Cream
  • tsp. Kosher Salt - divided
  • ¼ tsp. Ground White or Black Pepper
  • 1 Tbsp. Lemon Juice
  • 1 pinch Nutmeg
  • 1 pinch Paprika - Optional for garnish

INSTRUCTIONS

  • Scrub, peel and cut the potatoes into bite-size cubes.
  • Add the potatoes to a large pot, cover with cold water until they float, and bring to a boil over medium-high heat. Reduce the heat to medium-low, add one tsp. of salt and cook uncovered at a simmer until they are tender when pierced with a fork. (8 – 12 minutes).
  • Drain cooked potatoes in a colander and set aside.
  • While the potatoes cook, make a roux by adding butter to a medium skillet over medium heat. When the butter melts, sprinkle in the flour and whisk vigorously until the mixture is lump-free and flowing. (About 2 minutes) Slowly add the milk while continuing to whisk until it thickens. (2 – 3 minutes).
  • Remove the skillet from the heat, add the heavy cream, 1/2 tsp. salt, lemon juice, pepper, and a pinch of nutmeg. Whisk to combine.
  • Place the Potatoes into a serving dish and pour the cream sauce over the potatoes. Serve immediately. Garnish with a sprinkle of Paprika and a sprig of Parsley.

Notes

To get a smooth and silky cream sauce,  whisk until the sauce has thickened. Adding milk will produce lumps which will disappear with more whisking.
Refrigerate leftovers for up to four days. Reheat on the stove, in the oven, or microwave.  Do not freeze.
For Oven-baked Creamed Potatoes:  Add the cooked potatoes and sauce to a baking dish sprayed with non-stick cooking spray. Top with about a cup of panko breadcrumbs mixed with a tablespoon of melted butter. Bake in a preheated 350 °F oven for about 25 minutes.
