City Chicken

This was a staple in my mom's Slovak Kitchen. It went well with Mashed Potatoes and there were almost never any leftovers. It's super easy to make and will please the pickiest eaters in your household. From the South Side of Youngstown, Enjoy.

Equipment

  • 10" – 12” Covered Skillet
  • 9” x 12” Glass Baking Dish
  • 4" Wooden Skewers

INGREDIENTS 

  • 2 pounds Pork and Veal - cut into 1 1/2” cubes (Use all Pork if Veal is unavailable)
  • Salt and Pepper
  • 2 Eggs
  • 2 cups Bread Crumbs
  • 1 cup Flour for dredging
  • 1 cup Cooking Oil for Frying
  • Cooking Spray for Baking Dish

INSTRUCTIONS

  • Preheat Oven to 350°F
  • Put Meat onto Skewers, alternating Pork with Veal
  • Season with Salt Pepper to taste
  • Dredge in Flour, then Eggs, and finally Bread Crumbs (Run through Eggs and Bread Crumbs twice for extra breading)
  • Fry on all sides until Golden Brown (about 1 – 2 Minutes per side)
  • Transfer to Baking Dish, Cover with Foil, and Bake for 50 minutes
  • Uncover and Bake for an additional 10 minutes.
