INGREDIENTS
3Potatoes - Large - starchy
1Egg - Large
1 ½cupAP Flour
Salt - to taste

INSTRUCTIONS
Peel the potatoes, boil until tender, and then mash. Allow to cool completely before using.
Whip the egg and then combine it into the mashed potatoes with a pinch of salt.
Gradually add flour, starting with one cup, and mix until the dough begins to form. Add more flour as needed until the dough is soft but not sticky.
Turn the dough out onto a floured surface. Divide it into sections and roll each into a long, thin rope about 3/4" in diameter. Cut the ropes into 1" long pieces.
Bring a large pot of salted water to a boil. Drop the dumplings into the boiling water and cook until they float, about 2-3 minutes.
Remove the dumplings with a slotted spoon and drain well. Serve immediately with your choice of topping, such as melted butter, a sprinkle of salt, or a hearty meat sauce.
Optionally, Fry the dumplings in 2 Tbsp. of salted butter, until crispy.
Notes
These dumplings freeze well. Lay them individually on a baking sheet and place in the freezer. Then transfer to a bag or container for long-term storage.
