Chicken & Rice Casserole
Rich, Creamy flavors that make a fabulous one pot meal.Difficulty: Beginner
Servings 6
Equipment
- Slow Cooker
- Large Platter
- Cooking Spray
INGREDIENTS…
- 1 cup Minute Rice - uncooked
- 1 ½ lb. B/S Chicken Breasts
- 1 can Cream Of Chicken Soup - 10.5 oz undiluted
- 1 can Cream Of Mushroom Soup - 10.5 oz undiluted
- 1 cup Chicken Broth
- 1 Packet Onion Soup Mix
- Salt and Pepper - to taste
- 6 oz. Mushrooms - sliced
INSTRUCTIONS
- Spray the inside of the slow cooker with non-stick cooking spray.
- Spread the Minute Rice evenly over the bottom of the slow cooker.
- Place the Chicken Breasts on top of the Minute Rice.
- In a mixing bowl, combine the Mushrooms, the Cream Of Chicken Soup, Cream Of Mushroom Soup, and Chicken Broth. Mix until smooth.
- Pour the soup mixture over the Chicken Breasts and Minute Rice, making sure everything is covered.
- Sprinkle the Onion Soup Mix evenly on top.
- Cover and cook on LOW for 6 to 7 hours, or until the Chicken Breasts are cooked through and tender.
- Remove the cooked Chicken Breasts to a large serving plate and, using opposing forks, shred it. Return it to pot and stir to evenly combine.
- Season with Salt and Pepper to taste before serving.
Notes
Substitute Cream Of Celery Soup for one of the other soups for a different flavor profile.
Add a dash of paprika and a hint of garlic powder to give the dish extra kick.
