Chicken & Rice Casserole

Equipment

INGREDIENTS… 

  • 1 cup Minute Rice - uncooked
  • 1 ½ lb. B/S Chicken Breasts
  • 1 can Cream Of Chicken Soup - 10.5 oz undiluted
  • 1 can Cream Of Mushroom Soup - 10.5 oz undiluted
  • 1 cup Chicken Broth
  • 1 Packet Onion Soup Mix
  • Salt and Pepper - to taste
  • 6 oz. Mushrooms - sliced

INSTRUCTIONS

  • Spray the inside of the slow cooker with non-stick cooking spray.
  • Spread the Minute Rice evenly over the bottom of the slow cooker.
  • Place the Chicken Breasts on top of the Minute Rice.
  • In a mixing bowl, combine the Mushrooms, the Cream Of Chicken Soup, Cream Of Mushroom Soup, and Chicken Broth. Mix until smooth.
  • Pour the soup mixture over the Chicken Breasts and Minute Rice, making sure everything is covered.
  • Sprinkle the Onion Soup Mix evenly on top.
  • Cover and cook on LOW for 6 to 7 hours, or until the Chicken Breasts are cooked through and tender.
  • Remove the cooked Chicken Breasts to a large serving plate and, using opposing forks, shred it. Return it to pot and stir to evenly combine.
  • Season with Salt and Pepper to taste before serving.

Notes

Substitute Cream Of Celery Soup for one of the other soups for a different flavor profile.
Add a dash of paprika and a hint of garlic powder to give the dish extra kick.
