Marinated Tomatoes

Simple and quick, these Tomatoes will compliment any table. When Diced, they are perfect for Bruschetta.

Equipment

  • Sealed Jar
  • Covered Plate or Serving Bowl

INGREDIENTS 

  • 3 lg. Fresh Tomatoes - thickly sliced
  • cup EVOO
  • ¼ cup Red Wine Vinegar
  • 1 tsp. Salt - (Optional)
  • ¼ tsp. Pepper
  • 2 Tbsp. Onion - chopped
  • 1 Tbsp. Fresh Parsley - minced
  • 1 Tbsp. Fresh Basil or - 1 tsp. Dried Basil
  • 2 slices Salami - Finely chopped
  • ½ Clove Garlic - minced (Optional)
  • cup Goat Cheese - crumbled (Optional)

INSTRUCTIONS

  • Arrange tomatoes in a large shallow dish.
  • Combine Oil, Vinegar, Sal;ami, and Spices in a jar; cover tightly and shake well.
  • Pour over tomato slices.
  • Crumble Goat Cheese over Tomatoes
  • Cover and refrigerate for several hours.

Notes

Chop the Tomatoes into 1/2″ cubes for a perfect Bruchetta base topping.
Make the day before and simply keep refrigerated until needed.
