Marinated Tomatoes
Simple and quick, these Tomatoes will compliment any table. When Diced, they are perfect for Bruschetta. Difficulty: Beginner

- Sealed Jar
- Covered Plate or Serving Bowl
INGREDIENTS
- 3 lg. Fresh Tomatoes - thickly sliced
- ⅓ cup EVOO
- ¼ cup Red Wine Vinegar
- 1 tsp. Salt - (Optional)
- ¼ tsp. Pepper
- 2 Tbsp. Onion - chopped
- 1 Tbsp. Fresh Parsley - minced
- 1 Tbsp. Fresh Basil or - 1 tsp. Dried Basil
- 2 slices Salami - Finely chopped
- ½ Clove Garlic - minced (Optional)
- ⅓ cup Goat Cheese - crumbled (Optional)
INSTRUCTIONS
- Arrange tomatoes in a large shallow dish.
- Combine Oil, Vinegar, Sal;ami, and Spices in a jar; cover tightly and shake well.
- Pour over tomato slices.
- Crumble Goat Cheese over Tomatoes
- Cover and refrigerate for several hours.
Notes
Chop the Tomatoes into 1/2″ cubes for a perfect Bruchetta base topping.
Make the day before and simply keep refrigerated until needed.
