Chicken with Mushrooms

Golden Chicken in a rich Mushroom Sauce. Easy, with only a few ingredients to make a fabulous family dinner.

Equipment

  • Large Skillet

INGREDIENTS… 

  • 2 B/S Chicken Breasts
  • ½ tsp. Salt
  • ½ tsp. Black Pepper
  • ½ cup AP Flour - for Dredging
  • 3 Tbsp. Olive Oil
  • 2 Tbsp. Butter
  • 8 oz. Fresh Mushrooms - Sliced
  • 2 cloves Garlic - Minced
  • ¾ cup Chicken Broth
  • ½ cup Heavy Cream
  • 1 tsp. Dried Thyme
  • 2 Tbsp. Chopped Fresh Parsley - Optional Garnish

INSTRUCTIONS

  • Pat the Chicken dry, cross-cut into halves, and season with Salt and Black Pepper.
  • Lightly dredge each piece in Flour, shaking off excess.
  • Heat Olive Oil in a large skillet over medium heat.
  • Cook Chicken 4 to 5 minutes per side until golden brown and cooked through. Remove to a separate plate and cover.
  • In the same skillet, melt Butter. Add Mushrooms and cook until browned, about 5 to 7 minutes.
  • Stir in Garlic and cook for 30 seconds.
  • Add Chicken Broth and gently scrape the bottom of the pan to incorporate the flavor bits (fond). Let simmer for 3 to 4 minutes.
  • Stir in Heavy Cream and Thyme. Simmer until slightly thickened.
  • Return Chicken to the skillet and spoon sauce over the Chicken. Simmer 5 minutes.
  • Sprinkle with Parsley and serve warm over White Rice or Mashed Potatoes.
