Cheesy Beef & Pepper Casserole
This Casserole is pure comfort food. Ground Beef, Bell Peppers, and Cheese combine in a simple dish filled with flavor to satisfy the pickiest family. Simple ingredients make for perfection on busy nights.Difficulty: Easy

- Medium Skillet
- Medium Mixing Bowl
- Large Casserole
INGREDIENTS…
For the Ground Beef
- 1 lb Ground Beef
- 1 Tbsp. Olive Oil
- 1 Small Onion - diced
- 1 Red Bell Pepper - sliced
- 1 Yellow Bell Pepper - sliced
- 1 Green Bell Pepper - sliced
- 1 tsp. Garlic Powder
- 1 tsp. Smoked Paprika
- ½ tsp. Salt
- ½ tsp. Black Pepper
For the Topping
- 1 cup Mozzarella Cheese - shredded
- ½ cup Cheddar Cheese - shredded
- 2 Lg. Eggs
- ½ cup Heavy Cream
- 1 Tbsp. Fresh Parsley - chopped (optional)
INSTRUCTIONS
- Preheat oven to 375°F. Lightly grease a casserole dish.
- Heat Olive Oil in a skillet over medium heat. Add Ground Beef and cook until brown and crumbled. Drain excess fat.
- Add Onion and Bell Peppers to the skillet. Cook for 4–5 minutes until softened. Season with Garlic Powder, Paprika, Salt, and Pepper. Stir well.
- Transfer Beef mixture to the greased casserole.
- In a bowl, whisk Eggs and Heavy Cream. Pour evenly over the Ground Beef and Bell Peppers. Evenly cover with both Cheeses.
- Bake uncovered for 25–30 minutes, until bubbling and lightly golden on top.
- Rest 5 minutes to thicken and serve while still hot.
Notes
Serve with a simple Salad and Garlic Bread.
