INGREDIENTS
For the Ground Beef
1lbGround Beef
1Tbsp.Olive Oil
1Small Onion - diced
1Red Bell Pepper - sliced
1Yellow Bell Pepper - sliced
1Green Bell Pepper - sliced
1tsp.Garlic Powder
1tsp.Smoked Paprika
½tsp.Salt
½tsp.Black Pepper
For the Topping
1cupMozzarella Cheese - shredded
½cupCheddar Cheese - shredded
2Lg. Eggs
½cupHeavy Cream
1Tbsp.Fresh Parsley - chopped (optional)
INSTRUCTIONS
Preheat oven to 375°F. Lightly grease a casserole dish.
Heat Olive Oil in a skillet over medium heat. Add Ground Beef and cook until brown and crumbled. Drain excess fat.
Add Onion and Bell Peppers to the skillet. Cook for 4–5 minutes until softened. Season with Garlic Powder, Paprika, Salt, and Pepper. Stir well.
Transfer Beef mixture to the greased casserole.
In a bowl, whisk Eggs and Heavy Cream. Pour evenly over the Ground Beef and Bell Peppers. Evenly cover with both Cheeses.
Bake uncovered for 25–30 minutes, until bubbling and lightly golden on top.
Rest 5 minutes to thicken and serve while still hot.
