Shrimp Crostini

Creamy Shrimp atop toasted Baguette slices, finished under soft melted Cheese. A joyous blend of crunch and rich flavor with a hint of Citrus.

INGREDIENTS… 

  • 1 Baguette - sliced into rounds
  • 1 lb. Shrimp - peeled and deveined
  • 3 Tbsp. Butter - separated
  • 3 cloves Garlic - minced
  • 1 cup Mozzarella Cheese
  • ½ cup Parmesan Cheese
  • ¼ cup Mayonnaise
  • 1 Tbsp. Lemon Juice
  • Salt and Black Pepper to taste
  • 1 Tbsp. Fresh Parsley - finely chopped

INSTRUCTIONS

  • Preheat oven to 375°F.
  • Using 1 Tbsp. Butter, lithtly butter one side of each Baguette slice and arrange on a Baking Tray. Toast until just lightly golden. The centers remain slightly tender.
  • In a skillet, melt the remaining Butter and add the Garlic. Introduce the Shrimp and cook gently until pink and just firm. Do not burn the garlic. Remove from heat.
  • Dice the Shrimp and combine with Mayonnaise, Lemon Juice, Salt, and Black Pepper. Mix until the texture is creamy and well blended.
  • Spoon the Shrimp mixture onto each Baguette. Finish with a generous layer of Mozzarella and Parmesan Cheese, evenly distributed.
  • Place in the oven at 375°F. Bake until the Cheese melts and turns lightly golden. Garnish with Fresh Parsley and serve warm.
