INGREDIENTS
1Baguette - sliced into rounds
1lb.Shrimp - peeled and deveined
3Tbsp.Butter - separated
3clovesGarlic - minced
1cupMozzarella Cheese
½cupParmesan Cheese
¼cupMayonnaise
1Tbsp.Lemon Juice
Salt and Black Pepper to taste
1Tbsp.Fresh Parsley - finely chopped
INSTRUCTIONS
Preheat oven to 375°F.
Using 1 Tbsp. Butter, lithtly butter one side of each Baguette slice and arrange on a Baking Tray. Toast until just lightly golden. The centers remain slightly tender.
In a skillet, melt the remaining Butter and add the Garlic. Introduce the Shrimp and cook gently until pink and just firm. Do not burn the garlic. Remove from heat.
Dice the Shrimp and combine with Mayonnaise, Lemon Juice, Salt, and Black Pepper. Mix until the texture is creamy and well blended.
Spoon the Shrimp mixture onto each Baguette. Finish with a generous layer of Mozzarella and Parmesan Cheese, evenly distributed.
Place in the oven at 375°F. Bake until the Cheese melts and turns lightly golden. Garnish with Fresh Parsley and serve warm.
