Shrimp Crostini
Creamy Shrimp atop toasted Baguette slices, finished under soft melted Cheese. A joyous blend of crunch and rich flavor with a hint of Citrus. Difficulty: Beginner

INGREDIENTS…
- 1 Baguette - sliced into rounds
- 1 lb. Shrimp - peeled and deveined
- 3 Tbsp. Butter - separated
- 3 cloves Garlic - minced
- 1 cup Mozzarella Cheese
- ½ cup Parmesan Cheese
- ¼ cup Mayonnaise
- 1 Tbsp. Lemon Juice
- Salt and Black Pepper to taste
- 1 Tbsp. Fresh Parsley - finely chopped
INSTRUCTIONS
- Preheat oven to 375°F.
- Using 1 Tbsp. Butter, lithtly butter one side of each Baguette slice and arrange on a Baking Tray. Toast until just lightly golden. The centers remain slightly tender.
- In a skillet, melt the remaining Butter and add the Garlic. Introduce the Shrimp and cook gently until pink and just firm. Do not burn the garlic. Remove from heat.
- Dice the Shrimp and combine with Mayonnaise, Lemon Juice, Salt, and Black Pepper. Mix until the texture is creamy and well blended.
- Spoon the Shrimp mixture onto each Baguette. Finish with a generous layer of Mozzarella and Parmesan Cheese, evenly distributed.
- Place in the oven at 375°F. Bake until the Cheese melts and turns lightly golden. Garnish with Fresh Parsley and serve warm.
