Chicken with Mushrooms
Golden Chicken in a rich Mushroom Sauce. Easy, with only a few ingredients to make a fabulous family dinner. Difficulty: Easy

- Large Skillet
INGREDIENTS…
- 2 B/S Chicken Breasts
- ½ tsp. Salt
- ½ tsp. Black Pepper
- ½ cup AP Flour - for Dredging
- 3 Tbsp. Olive Oil
- 2 Tbsp. Butter
- 8 oz. Fresh Mushrooms - Sliced
- 2 cloves Garlic - Minced
- ¾ cup Chicken Broth
- ½ cup Heavy Cream
- 1 tsp. Dried Thyme
- 2 Tbsp. Chopped Fresh Parsley - Optional Garnish
INSTRUCTIONS
- Pat the Chicken dry, cross-cut into halves, and season with Salt and Black Pepper.
- Lightly dredge each piece in Flour, shaking off excess.
- Heat Olive Oil in a large skillet over medium heat.
- Cook Chicken 4 to 5 minutes per side until golden brown and cooked through. Remove to a separate plate and cover.
- In the same skillet, melt Butter. Add Mushrooms and cook until browned, about 5 to 7 minutes.
- Stir in Garlic and cook for 30 seconds.
- Add Chicken Broth and gently scrape the bottom of the pan to incorporate the flavor bits (fond). Let simmer for 3 to 4 minutes.
- Stir in Heavy Cream and Thyme. Simmer until slightly thickened.
- Return Chicken to the skillet and spoon sauce over the Chicken. Simmer 5 minutes.
- Sprinkle with Parsley and serve warm over White Rice or Mashed Potatoes.
