Macaroni Salad – Grandma’s Best
A favorite blend of ingredients perfect for summer picnics or family gatherings.Difficulty: Beginner
Servings 12
Equipment
- Large Mixing Bowl
- Medium Bowl
- Large Pot for Pasta
- 2 qt Pan, for Eggs
INGREDIENTS…
Solids
- 16 oz Elbow Macaroni
- ½ cup Onion - diced
- ½ cup Celery - diced
- ¾ cup Red Bell Pepper - diced
- ¼ cup Sweet Pickle Relish - or Pickles, diced
- 6 Eggs - Hard Boiled – chopped
Dressing
- 2 cup Mayo
- 2 Tbsp Red Wine Vinegar
- 1 Tbsp Sugar
- 1 tsp Garlic Powder
- 1 tsp Onion Powder
- 1 ½ tsp Paprika
- 1 – 2 Tbsp Dill Pickle Juice, - to thin mix
INSTRUCTIONS
- Boil Elbows per package directions in salted water. Drain and set aside.
- Mix Elbows and solids in a large bowl, stirring gently to a uniform blend. Set aside.
- Combine Dressing ingredients in medium bowl, whisking to blend well. Add Pickle Juice last until the dressing is thinned to your liking.
- Finally combine everything in the large bowl and mix well.
- Refrigerate 1 Hour or more.
- Serve cold.
Notes
Be sure to keep cold on those hot, summer picnic tables.
Goes especially well with dogs, burgers and sweet iced tea.
