Beef & Potato Fideo
An inexpensive Beef and Potato Fideo stovetop casserole. It's easy to make and gluten-free. Difficulty: Easy

Equipment
- 12” Covered Skillet with Deep Sides
INGREDIENTS…
- 1 lb. Ground Beef
- 4 Potatoes - Peeled and Diced
- 1 Onion - Chopped
- 3 Cloves Garlic - Minced
- 8 Ounces Pasta - Your Choice
- 1 Can Diced Tomatoes
- 4 Cups Beef Broth
- Salt, Pepper, Paprika, and Cumin - to taste
- Shredded Cheese - Optional topping
INSTRUCTIONS
- Brown the Ground Beef in a Lg. Skillet. Remove any excess fat.
- Add the Chopped Onion and Minced Garlic. Sauté until fragrant.
- Stir in the Diced Potatoes, Pasta, Diced Tomatoes, Beef Broth, and Seasonings.
- Cover and simmer the mixture until the Potatoes are tender and the Pasta is cooked.
- Sprinkle Shredded Cheese over the top and cover until melted.
- Serve hot.
Notes
The type of Pasta and Cheese is left to you.
Our favorites are regular Spaghetti or small Elbows and grated Parmesan or shredded Cheddar.
