Chicken And Buttered Noodles

Equipment

  • Large Covered Skillet with Deep Sides

INGREDIENTS… 

  • 1 lb B/S Chicken Breasts or Thighs
  • 4 Tbsp. Butter - divided
  • 1 Tbsp. EVOO
  • 1 Small Onion - diced (optional)
  • 2 Cloves Garlic - minced
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Italian Seasoning
  • 1 tsp. Salt
  • ½ tsp. Black Pepper
  • 3 cups Chicken Broth
  • 1 ½ cups Milk or Half-And-Half
  • 8 oz Egg Noodles - uncooked
  • Optional: Parsley, Parmesan, or Red Pepper Flakes

INSTRUCTIONS

  • Cut Chicken into bite-sized pieces.
  • Heat 2 Tbsp. Butter and Oil in a skillet over medium heat.
  • Add Chicken and season with Garlic Powder, Onion Powder, Italian Seasoning, Salt, and Pepper. Cook until no pink remains. DO NOT OVERCOOK.
  • Add diced Onion (if using) and cook 2 to 3 minutes until softened.
  • Stir in minced Garlic and cook 1 minute.
  • Add the uncooked Egg Noodles, Chicken Broth, and Milk, making sure Noodles are fully covered with liquid. Stir well.
  • Bring to a gentle simmer, cover, and cook for 8 to 10 minutes, stirring occasionally, until Noodles are tender.
  • Stir in remaining Butter to finish the Noodles. Simmer 1 to 2 minutes to melt Butter and thicken slightly.
  • Garnish with Parsley or Parmesan and serve warm.
