Potato Rounds – Cheese & Bacon

A simple baked Appetizer that will disappear as you put it on the table.

Equipment

  • Large Rimmed Baking Sheet
  • Aluminum Foil
  • Mandolin optional

INGREDIENTS… 

  • 2 lbs Russet Potatoes
  • 8 oz Sharp Cheddar Cheese - Shredded
  • 6 slices Thick-cut Bacon - Cooked and Crumbled
  • 3 Green Onions - Chopped

INSTRUCTIONS

  • Preheat your oven to 425° F.
  • Line a large, rimmed baking sheet with foil.
  • Scrub your Potatoes and slice them into 1/4" thick rounds. Leave skins on. Use a Mandolin for uniformity, if available.
  • Arrange the Potatoes in a single layer. Bake for 20 to 25 minutes, flipping halfway through.
  • When lightly browned and fork tender, remove from the oven. Using the back of a tablespoon, make a circular depression in the center of each "round". Add Cheese and Crumbled Bacon in the depression and evenly over the top.
  • Return the pan to the oven for 5 to 8 minutes until the cheese is bubbling.
  • Garnish with the Green Onions.
