INGREDIENTS
2lbsRusset Potatoes
8ozSharp Cheddar Cheese - Shredded
6slicesThick-cut Bacon - Cooked and Crumbled
3Green Onions - Chopped
INSTRUCTIONS
Preheat your oven to 425° F.
Line a large, rimmed baking sheet with foil.
Scrub your Potatoes and slice them into 1/4" thick rounds. Leave skins on. Use a Mandolin for uniformity, if available.
Arrange the Potatoes in a single layer. Bake for 20 to 25 minutes, flipping halfway through.
When lightly browned and fork tender, remove from the oven. Using the back of a tablespoon, make a circular depression in the center of each "round". Add Cheese and Crumbled Bacon in the depression and evenly over the top.
Return the pan to the oven for 5 to 8 minutes until the cheese is bubbling.
