INGREDIENTS
1Lb.Bacon - Regular slice - chopped
1SmallOnion - diced
1 ½Lb.B/S Chicken -
1tsp.Salt
½tsp.Pepper
3Tbsp.Cornstarch
1cupHeavy Cream
16oz.Rotinni Pasta
32oz.Chicken Broth - (4 cups)
2cupsCheddar Cheese - shredded
INSTRUCTIONS
Place 1 pound of chopped Bacon in a large pan on medium heat. When 3/4 cooked through, add Onion and cook until translucent and the Bacon is crisp.
Remove the Bacon and Onion from the pan and drain on paper towels. Leave any bacon grease in the pan.
Cut 1 1/2 pounds of Chicken into bite-sized chunks. Season with Salt and Pepper. Then add 3 tablespoons of Cornstarch and mix well.
Return Chicken to the pan and cook at medium-high heat for 3 minutes on both sides, tossing for another 1/2 minute. Remove the Chicken from the pan.
Add Chicken Broth and Pasta to the pan. Raise heat to a boil and cook until liquid is gone and pasta is cooked through - 8 minutes.
Set heat to low and add Heavy Cream. Stir and add 1 cup of Cheese, mix until melted. Add remaining Cheese and continue mixing until melted.
