INGREDIENTS
1lbBoneless Skinless Chicken Thighs - cut into 4 pieces each
1lbPotatoes - cut into 1" cubes
1Large Onion - cut into 8 wedges
½tspfresh ground Black Pepper
1tspGarlic Salt
½tspItalian Seasoning
1 ½TbspEVOO
¼ tspSalt - Final to taste
INSTRUCTIONS
Preheat the air fryer on 400 F for 5 minutes.
Add the potato cubes, onion wedges, black pepper, salt, Italian seasoning, and olive oil to a medium bowl. Toss to combine, taking care to not separate the onion wedges into individual slices.
Air fry the potatoes and onions for 14 minutes at 400°F, shaking half way through.
Trim any excess fat from the chicken and season with salt and pepper.
Place the chicken pieces on the potatoes and onions and air fry for an additional 7 minutes turning chicken over after 4 minutes. Chicken should be 165° F. internally.
Give everything a final toss, add additional salt (to taste), and serve.
Notes
Potatoes may be Yukon Gold, Baby Reds or even sweet potatoes. Do not double recipe or crowd ingredients in your Fryer. They must be able to brown. You can substitute dried rosemary for Italian seasoning.
This recipe used a 9 Qt PowerXL Air Fryer with 1,700 watts. Smaller fryers will take longer to cook. Check for doneless using an instant-read meat therometer.
