INGREDIENTS
1Lb.Hamburger
1tsp.Kosher Salt
¼tsp.White Pepper
½cupOnion
3clovesGrlic
¾cupCarrots
1cupCelery
1canV-8 Juice - 11.5 oz.
1canTomatoes - Petite Diced - 14.5 oz.
1canTomato Sauce - 15 oz.
1cupWater - more if desired to thin
1canGreat Northern - 15 oz.
1canKidney Beans - 15 oz.
1Tbsp.Red Wine Vinegar
2tsp.Italian Seasoning
1-1 ½cupsDitalini Pasta - uncooked
Grated Parmesan Cheese and fresh Basil for serving - (Optional)
INSTRUCTIONS
In a large pot over medium heat, brown hamburger. Add salt and pepper and stir until combined.
Add onions, garlic, carrots, and celery and sauté for 5 minutes.
Add V-8 juice, tomatoes, tomato sauce, water, beans, vinegar, and Italian seasoning. Simmer for 30 minutes on medium low, stirring occasionally.
In a separate pot, boil pasta until al dente, about 7 minutes. Do NOT over-cook.
Drain Pasta and combine with soup.
Serve hot in bowls. Add parmesan and fresh basil, if desired.
Notes
Adjust V8 or water to get your desired consistency. Reduce pasta to 1 cup for fewer noodles.
