Potato Rounds – Cheese & Bacon
A simple baked Appetizer that will disappear as you put it on the table.Difficulty: Beginner
Servings 6
Equipment
- Large Rimmed Baking Sheet
- Aluminum Foil
- Mandolin optional
INGREDIENTS…
- 2 lbs Russet Potatoes
- 8 oz Sharp Cheddar Cheese - Shredded
- 6 slices Thick-cut Bacon - Cooked and Crumbled
- 3 Green Onions - Chopped
INSTRUCTIONS
- Preheat your oven to 425° F.
- Line a large, rimmed baking sheet with foil.
- Scrub your Potatoes and slice them into 1/4" thick rounds. Leave skins on. Use a Mandolin for uniformity, if available.
- Arrange the Potatoes in a single layer. Bake for 20 to 25 minutes, flipping halfway through.
- When lightly browned and fork tender, remove from the oven. Using the back of a tablespoon, make a circular depression in the center of each "round". Add Cheese and Crumbled Bacon in the depression and evenly over the top.
- Return the pan to the oven for 5 to 8 minutes until the cheese is bubbling.
- Garnish with the Green Onions.
