Pepper Steak – Crock Pot
Beef simmered with Peppers and Onions . Pure comfort in a bowl. Your slow cooker does the work.Difficulty: Easy
Equipment
- Crock Pot
- Medium Mixing Bowl
INGREDIENTS…
For Beef
- 2 lbs. Flank Steak or Sirloin
- 1 Tbsp. Cornstarch
- 1 Tbsp. EVOO
- 1 Small Onion - sliced
- 1 Red Bell Pepper - sliced
- 1 Green Bell Pepper - sliced
- 2 Cloves Garlic - minced
For Sauce
- ¾ cup Low-Sodium Beef Broth
- ½ cup Low-Sodium Soy Sauce
- 2 Tbsp. Brown Sugar
- 1 Tbsp. Worcestershire Sauce
- 1 tsp. Ground Ginger
- ½ tsp. Black Pepper
- ½ tsp. Red Pepper Flakes - (optional)
Optional Garnish
- 1 Tbsp. Sesame Seeds
- 2 Tbsp. Chopped Green Onions
INSTRUCTIONS
- Thinly slice the Steak across the grain and place in a bowl. Toss with Cornstarch until lightly coated.
- Place Beef in the slow cooker. Top with sliced Onions, Bell Peppers, and Garlic.
- In a small bowl, whisk together Beef Broth, Soy Sauce, Brown Sugar, Worcestershire Sauce, Ground Ginger, Black Pepper, and Red Pepper Flakes.
- Pour the sauce evenly into the Crock Pot, cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until Beef is tender.
- Stir gently before serving.
Notes
Garnish with Sesame Seeds and Green Onions, if desired.
Serve over steamed White Rice, Fried Rice, or Lo Mein.
