Pepper Steak – Crock Pot

Beef simmered with Peppers and Onions . Pure comfort in a bowl. Your slow cooker does the work.

INGREDIENTS… 

For Beef

  • 2 lbs. Flank Steak or Sirloin
  • 1 Tbsp. Cornstarch
  • 1 Tbsp. EVOO
  • 1 Small Onion - sliced
  • 1 Red Bell Pepper - sliced
  • 1 Green Bell Pepper - sliced
  • 2 Cloves Garlic - minced

For Sauce

  • ¾ cup Low-Sodium Beef Broth
  • ½ cup Low-Sodium Soy Sauce
  • 2 Tbsp. Brown Sugar
  • 1 Tbsp. Worcestershire Sauce
  • 1 tsp. Ground Ginger
  • ½ tsp. Black Pepper
  • ½ tsp. Red Pepper Flakes - (optional)

Optional Garnish

  • 1 Tbsp. Sesame Seeds
  • 2 Tbsp. Chopped Green Onions

INSTRUCTIONS

  • Thinly slice the Steak across the grain and place in a bowl. Toss with Cornstarch until lightly coated.
  • Place Beef in the slow cooker. Top with sliced Onions, Bell Peppers, and Garlic.
  • In a small bowl, whisk together Beef Broth, Soy Sauce, Brown Sugar, Worcestershire Sauce, Ground Ginger, Black Pepper, and Red Pepper Flakes.
  • Pour the sauce evenly into the Crock Pot, cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours, until Beef is tender.
  • Stir gently before serving.

Notes

Garnish with Sesame Seeds and Green Onions, if desired.
Serve over steamed White Rice, Fried Rice, or Lo Mein.
