O-Rings – Breaded, Stuffed

A unique variation on the usual appetizer. Crispy, Crunchy, Cheese-filled Onion Rings are our newest favorite.

Equipment

  • Baking Sheet
  • Parchment Paper
  • 3 Small Bowls Lg.

INGREDIENTS… 

  • 2 Lg. Onions - Vedalia are best
  • 8 oz. Mozzarella Cheese Sticks
  • 1 cup AP Flour
  • 2 Eggs
  • 1 cup Panko Breadcrumbs
  • 1 tsp. Garlic Powder
  • 1 tsp. Paprika
  • Salt and Pepper to taste
  • Cooking Spray

INSTRUCTIONS

  • Preheat oven to 400°F and line a baking sheet with parchment paper.
  • Slice the Onions into 1/2″ slices and separate into rings. Set aside.
  • Slice the Mozzarella Sticks, lengthwise, into 1/8" thick ribbons and place one inside a large Onion Ring, coiling it around. Trim the ribbon to length so that the ends meet. Use two ribbons inside each other if desired. Then place a Smaller Onion Ring inside the cheese ring. Continue until all the Onion Rings are filled with Cheese.
  • Set up three bowls: one each for the Flour, the Beaten Eggs, and the Panko Breadcrumbs mixed with Garlic Powder, Paprika, Salt, and Pepper.
  • Dip each stuffed Onion Ring into the Flour, making sure it’s well-coated. Then, dip into the Eggs, and finally coat it with the Breadcrumb Mixture.
  • Place the Rings on the parchment paper and lightly spray with Cooking Spray for crispy rings.
  • Bake for 15 to 20 minutes, or until golden brown & crisp.
  • Allow the Onion Rings to cool a bit before serving.

Notes

Provolone or Pepper Jack Cheese would be delicious alternatives.
