Farmer’s Casserole

Hash Brown Potato and Ham Casserole
Comfort Food at its best. This Oven-baked classic has Eggs, Potatoes, Ham, Cheese, and your favorite veggies.Difficulty: Easy

Equipment
- 9×13-inch baking dish
- Large Skillet
- Mixing bowl
- Whisk
INGREDIENTS
- 4 cups Frozen Hash Brown Potatoes - thawed
- 1 cup Cooked Ham - diced
- 1 cup Cheddar Cheese - shredded
- 1 cup Mozzarella or Colby-Jack Cheese - shredded
- ½ cup Onion - chopped
- ½ cup Mushrooms - sliced
- ¼ cup Green Bell Pepper - chopped
- 2 Green Onions - chopped for topping
- 6 Lg. Eggs
- 1 cup Milk
- ½ tsp. Salt
- ½ tsp. Black Pepper
- ¼ tsp. Garlic Powder
- ¼ tsp. Paprika
- 1 Tbsp. Butter - for greasing dish
INSTRUCTIONS
- Preheat oven to 375°F. Grease baking dish.
- Spread Hash Browns evenly. Sprinkle Ham, Onion, Mushrooms, and Green Bell Pepper over the top.
- Add Cheese: Distribute Cheddar Cheese and Mozzarella Cheese evenly.
- Mix Egg Custard: Whisk Eggs, Milk, Salt, Black Pepper, Garlic Powder, and Paprika until combined.
- Pour egg mixture over casserole. Press gently to settle.
- Bake for 40–45 minutes, until set and golden.
- Let rest for 5–10 minutes. Garnish with Green Onions.
Notes
Add or substitute Sausage or Bacon for Ham.
Add Spinach or Zucchini for additional vegetables.
Serve with toast or a green salad.
