INGREDIENTS
For Chicken:
2LgChicken Breasts - cubed
1Tbsp.EVOO
1tsp.Salt
1tsp.Black Pepper
1tsp.Garlic Powder
6oz.Stuffing Mix
6oz.Mushrooms - sliced
1 ½cupsChicken Broth - for Stuffing
1can Cream Of Chicken Soup - (10.5 oz)
½cupSour Cream
½cupHeavy Cream
For the Gravy:
3Tbsp.Butter
3Tbsp.AP Flour
2 ½cupsChicken Broth - (heated)
½tsp.Black Pepper
½tsp.Poultry Seasoning
Salt - to taste
INSTRUCTIONS
Brown the Chicken
Heat Olive Oil in a large oven-safe skillet with high sides over medium heat. Season Chicken with Salt, Black Pepper, and Garlic Powder. Cook 5–6 minutes until lightly browned. Set aside on a covered plate to keep warm.
Preheat Oven to 375°F.
Make the Chicken Base
Sauté Mushrooms in the skillet until slightly browned. 3 to 4 minutes.
Stir Cream Of Chicken Soup, Sour Cream, and Heavy Cream into the skillet. Simmer 2–3 minutes until slightly thickened and Creamy.
Return the Chicken to the skillet and stir to combine.
Prepare the Stuffing
In a bowl, combine Stuffing Mix with hot Chicken Broth. Cover with Plastic Wrap to keep moisture in. Let sit 5 minutes to absorb.
Layer & Bake
Spread Stuffing evenly over Chicken mixture. Bake at 375°F. for 20–25 minutes until golden and bubbly.
Make the Gravy
Melt Butter in a saucepan over medium heat. Whisk in Flour and cook 1–2 minutes. Slowly whisk in warm Chicken Broth. Add Black Pepper and Poultry Seasoning. Simmer until thick and silky.
Serve
Plate the Chicken & Stuffing. Then spoon Gravy over each serving.
Notes
Stir in Shredded Cheddar for a cheesy layer underneath.
Broil 2–3 minutes after baking for extra crispy Stuffing.
