INGREDIENTS
2sheetsPuff Pastry - thawed
12Lg.Shrimp - cooked
4oz.Cream Cheese - softened
½cupMozzarella Cheese - shredded
¼cupParmesan Cheese - grated
2Tbsp.Mayonnaise
2Garlic Cloves - minced
1Tbsp.Lemon Juice
½tsp.Old Bay Seasoning
1Egg - beaten
2Tbsp.Fresh Parsley - chopped
Salt and Black Pepper - to taste
INSTRUCTIONS
Preheat oven to 400°F. Grease a muffin tin.
Cut Puff Pastry Sheet into squares and press into the muffin tin. Using a fork, prick the bottoms lightly.
In a bowl, mix Cream Cheese, Mayonnaise, Garlic, Lemon Juice, Old Bay Seasoning, Salt, Black Pepper, half the Mozzarella Cheese, and half the Parmesan Cheese until creamy.
Spoon the filling into each pastry cup and top with half of the remaining Mozzarella and Parmesan Cheese.
Brush the pastry edges with beaten Egg.
Bake for 16 to 20 minutes, until puffed, golden, and bubbly. Then top with a Shrimp and sprinkle with the remaing Cheese and return to the oven for another 2 minutes to warm the Shrimp and melt the cheese.
