Salisbury Steak:
1lb.Ground Beef
⅓CupBreadcrumbs
1Lg.Egg
1Onion - finely diced
1Tbsp.EVOO
1tsp.Salt
½tsp.Pepper
Gravy:
8oz.Sliced Mushrooms
2Tbsp.Butter - unsalted
2Tbsp.AP Flour
2CupBeef Broth
Salt and Pepper - to taste
INSTRUCTIONS
Place the Ground Beef, Onion, Egg, Breadcrumbs, Salt, and Pepper into a mixing bowl. Combine with your hands until completely combined. (Don't overmix - this will ruin the texture, making it dry and tough.)
Heat the Oil in a skillet over medium high heat.
Form the meat into four equal patties and place in the skillet. Sauté until browned on both sides and cooked through. Remove the patties from the skillet and place on the side for later. Cover loosely with foil.
Reduce the heat to medium and add the Butter and Mushrooms to the skillet. Sauté until the Mushrooms soften.
Whisk in the Flour, stirring constantly another minute.
Whisk in the Beef Broth and simmer to thicken.
Return the patties to the skillet, and toss to coat in the gravy.
