INGREDIENTS
2poundsPork and Veal - cut into 1 1/2” cubes (Use all Pork if Veal is unavailable)
Salt and Pepper
2Eggs
2cupsBread Crumbs
1cupFlour for dredging
1cupCooking Oil for Frying
Cooking Spray for Baking Dish
INSTRUCTIONS
Preheat Oven to 350°F
Put Meat onto Skewers, alternating Pork with Veal
Season with Salt Pepper to taste
Dredge in Flour, then Eggs, and finally Bread Crumbs (Run through Eggs and Bread Crumbs twice for extra breading)
Fry on all sides until Golden Brown (about 1 – 2 Minutes per side)
Transfer to Baking Dish, Cover with Foil, and Bake for 50 minutes
