INGREDIENTS
1lb.Kielbasa Sausage - sliced
2Tbsp.Olive oil
1lg.Onion - chopped
1Red Bell Pepper - chopped
1Yellow Bell Pepper - chopped
2med.Zucchinis - cubed
3clovesGarlic - minced
14oz.Diced Tomatoes - 1 can
1Tbsp.Sweet Paprika
1tsp.Smoked Paprika
Salt and Pepper - to taste
Fresh Parsley - for Garnish
INSTRUCTIONS
Sauté the Sausage:
In a large pot, heat 1 Tbsp. of Olive Oil over medium heat. Add the Kielbasa slices and cook until browned on both sides. Remove the sausage and set aside.
Cook the Vegetables:
In the same pot, add the remaining Olive Oil, followed by the Onions and Garlic. Sauté until the Onions become translucent. Add the Bell Peppers and Zucchini. Cook until they begin to soften.
Combine and Simmer:
Return the Kielbasa to the pot along with the Tomatoes. Sprinkle in the Sweet and Smoked Paprika, Salt, and Pepper. Stir well meld all the ingredients.
Allow to Stew:
Reduce the heat to low and let the Stew for about 20-30 minutes, or until the vegetables are tender and the flavors have blended.
Garnish and Serve:
Taste and adjust the seasoning if necessary. Remember to stir well after adding seasonings. Serve the stew hot, garnished with fresh parsley. Pair with fresh, sliced bread.

• Vegetable Variations: Add other vegetables like eggplant or mushrooms as desired.• Consistency: If you prefer a thicker stew, add a Tbsp. of Tomato Paste or Flour to the vegetables before adding the Tomatoes.
