INGREDIENTS
2cupsWide Egg Noodles - (10 oz.)
9oz.Smoked Ham - diced
3lgEggs
¾cupHeavy Cream
½tspSalt - to taste
¼tspBlack Pepper - to taste
Spray Oil - for greasing
Breadcrumbs or Mild Cheddar Cheese - for topping - Optional
Sautéed Onion &/or Sliced Mushrooms - for extra flavor- Optional
INSTRUCTIONS
Cook the Noodles
Boil Pasta in salted water until al denté. Drain and let cool slightly.
Cream Sauce
In a bowl, whisk together Eggs, Cream, Salt, and Pepper.
Preheat the oven to 350°F. Grease the baking dish.
Mix and assemble
Add Ham and Noodles (plus optional veggies) to the Egg mix. Stir well. Pour into the baking dish and spread evenly. Cover with Foil.
Optionally, Leave uncovered. Sprinkle with breadcrumbs or grated cheese.
Bake for 30–35 minutes, or until golden and set.
Cool slightly, then slice and serve.
Notes
Add Onions, Sliced Mushrooms, or cooked Bacon bits, etc. for extra flavor.Experiment by adding sweet Bell Peppers, whole kernel Corn or even Peas.Substituted Chicken or Pork chunks for the diced Ham.
