INGREDIENTS
12ozPasta - fettuccine, penne, linguine, etc.
For Chicken Bites
1lb.B/S Chicken Breasts - cut into bite-sized pieces
2Tbsp.EVOO - (or butter)
4Tbsp.Unsalted Butter
4ClovesGarlic - minced
Salt and Pepper - to taste
1tsp.Italian Seasoning or Paprika - optional
For Cheese Sauce
2Tbsp.Unsalted Butter
2ClovesGarlic - minced
Salt and Pepper - to taste
1cupHeavy Cream
1cupGrated Parmesan Cheese
¼cupChicken Broth - (optional, for extra sauce)
Garnish
Fresh Parsley - chopped
INSTRUCTIONS
Pasta
Cook the Pasta in salted water according to package instructions until al dente.
Drain, reserving 1/2 cup of pasta water.
Chicken Bites
Cut the Chicken Breasts into bite sized pieces and season generously with Salt, Pepper, and optional Spices.
Heat EVOO (or butter) in a large skillet over medium-high heat. Add the Chicken and cook until lightly browned. Remove to a plate and lightly tent to keep warm. DO NOT OVER-COOK.Chicken Breasts get dry and tough if they over-cook.
In the same skillet, melt 4 Tbsp. of Butter over medium heat.
Add the minced Garlic and sauté for 1–2 minutes until fragrant.
Deglaze the skillet using Broth.
Return the Chicken Bites to the skillet, tossing to coat in the garlic butter. Remove the skillet from heat and set aside.
Creamy Parmesan Sauce
In a medium saucepan, melt 2 Tbsp. of Butter over medium heat.
Add the minced Garlic and sauté for 1 minute until fragrant.
Stir in the Heavy Cream, Parmesan Cheese, Salt, and Pepper. Cook for 2–3 minutes, stirring constantly, until the sauce thickens slightly. Add a splash of reserved pasta water to loosen it if it gets too thick.
Final Assembly
Add the Pasta to the Creamy Parmesan Sauce, tossing gently to coat evenly. Then divide the pasta onto plates and top with Chicken Bites. Garnish with Fresh Chopped Parsley.
Notes
Substitutes for Chicken: Shrimp, Sausage, or Turkey.Optionally, add Spinach, Cherry Tomatoes, or Roasted Red Peppers.Use only fresh Garlic and Parmesan Cheese for best flavor.For more zip, add Red Pepper Flakes or a dash of Hot Sauce.Keep leftovers for 3 days in an airtight container in the fridge. Reheat gently on the stove adding a splash of cream or pasta water if the sauce gets too thick.
