INGREDIENTS
16oz.Egg Noodles - cooked, al dente
2lbs.Beef Stew Meat - cubed
1Onion - diced
1poundMushrooms - sliced
1Tbsp.EVOO
Salt & Pepper
1tsp.Garlic Powder
1Tbsp.Dijon Mustard
1Tbsp.Worcestershire Sauce
2 ½cupsBeef Broth - divided
1pkg Boursin Cheese - 5.3 oz.
8oz.Sour Cream
3Tbsps.Cornstarch
INSTRUCTIONS
Season Beef with Salt and Pepper. Heat Oil in a skillet over medium high heat. Add seasoned Beef to skillet . Quickly sear until browned on all sides. Do NOT over-cook.
Place the browned Beef, Garlic Powder, Onion, Dijon, Worcestershire, Mushrooms and 2 cups Broth in a slow cooker.
Cook 4-5 hours on high (7-8 hours on low) until beef is tender.
When almost done, combine the remaining Broth with Cornstarch, mix until lump-free, and stir into slow cooker. Cover and cook an additional 15 minutes or until thickened.
Add the Boursin Cheese and Sour Cream and stir until smooth and completely combined.
