Marinate The Beef
Place Beef In a bowl. Add 1 Tbsp. of Soy Sauce, Cornstarch, and a small pinch of Sugar. Mix thoroughly to evenly coat. Allow the Beef to rest for 10+ minutes.
Prepare The Sauce
Combine the remaining Soy, Oyster, and Hoisin Sauce, Water, and Sugar In a bowl. Set Aside.
Sauté the Onions until translucent.
Heat 1 Tbsp. of Vegetable Oil In a Lg. pan or Wok over medium-high heat. Add the Onions and stir-fry for 5 minutes until caramelized. Remove the Onions from the pan and set aside.
Cook The Beef
To the same pan, add the remaining Oil and increase the heat slightly. Add the Beef in a single layer. Stir-fry for 3 to 4 minutes until the Beef is browned and just cooked through. Add the minced Garlic and Ginger, stirring constantly for about 1 minute until fragrant. Do not overcook the Beef, making it tough.
