1Tbsp.Onion Powder
1Tbsp.Kosher Salt
½tsp.Black Pepper
1tsp.Dry Mustard
1tsp.Cayenne Pepper - - Optional
INSTRUCTIONS
Remove membrane from ribs' bone side, then rinse. Cut into 2 Half-Rack servings (7 or 8 ribs each). Pat dry with a paper towel.
In a medium bowl, make a batch of Dry Rub using the ingredients listed above. These quantities yield about 2 cups. Make this batch once and it will be ready all summer long.
Salt and Pepper the ribs (both sides). Be generous with the salt but go lightly with the pepper. Then add a light dusting of Dry Rub to both sides.
Insert a temp probe lengthwise into the center of the meatiest part of one of the half racks.
Place the seasoned ribs on a single sheet of Aluminium Foil rolling the long edges together, forming a seal, and close off the ends as tightly as possible. Place the Foil-wrapped ribs on a baking sheet and place inside a cold oven.
Set the oven to 325°F. and allow the ribs to slowly roast until your temp probe reads 200°F. (about 2 hours). Remove the baking tray from the oven and open the foil. Baste the ribs generously with the BBQ sauce and return them to the oven for another 15 minutes to allow the sauce to glaze.
Finally, remove the ribs from the foil and carve into individual rib servings.
Notes
My go-to BBQ sauce is KC Masterpiece - Original but you may substitute your favorite. This recipe is simple, once you mix up the Dry Rub. Then it's only a matter of technique in baking them. I find half racks are easier to handle and make a perfect 2 person meal. This also works well for Grilling over medium heat. Be sure to carefully watch the temp with either method. Over-cooking will dry out the ribs.
