2tsp.Chili Powder
1tsp.Paprika
1tsp.Dried Oregano
1tsp.Salt
1tsp.Sugar - (Adjust for sweetness)
½tsp.Ground Cumin
½tsp.Garlic Powder
½tsp.Onion Powder
⅛tsp.Cayenne Pepper - (Adjust for heat)
INSTRUCTIONS
Mix all ingredients together and store in a sealed container.

Maintain the proportions of the spices and make as much as you need.The USUAL amount for Chicken or Beef Fajitas is about 2 to 3 Tbls. (Comparable to 1 to 1 1/4 Oz. in a commercial packet.)Adjust Cayenne Pepper for heat.Adjust Sugar for sweetness.To make Chicken or Beef Fajitas... Thinly slice the meat and cook to the desired doneness in a saucepan with a bit of EVOO. Sprinkle Seasoning on meat and stir to coat evenly. Add 1/4 cup Chicken/Beef stock or water to deglaze the pan. This will make a thin sauce. In a separate bowl, mix 1 Tbsp. Cornstarch to 1/4 cup Beef/Chicken Stock or water. Mix thoroughly to make a light slurry, then add to the meat. Simmer until the mixture reaches the desired thickness.
