INGREDIENTS
CHILI:
16oz.Tomato Sauce
12oz.Tomato Paste
1Yellow Onion - grated
2Tbsp.Chili Powder
2Tbsp.Cocoa Powder
2Tbsp.Sugar
2tsp.Kosher Salt
1tsp.Ground Cinnamon
1tsp.Ground Cumin
1tsp.Garlic Salt
½tsp.Ground Allspice
½tsp.Black Pepper - Freshly Ground
¼tsp.Cayenne Pepper
¼tsp.Ground Cloves
2Bay Leaves
2Lbs.Chuck - ground fine
1Tbsp.White Wine Vinegar
ASSEMBLY:
1Lb.Spaghetti - cooked al denté.
1 15 oz. canKidney Beans - drained
1White Onion - diced
16oz.Cheddar Cheese - grated
Hot sauce - optional
Oyster crackers - for serving
INSTRUCTIONS
In a stockpot, combine the tomato sauce, tomato paste, onions, chili powder, cocoa powder, sugar, kosher salt, cinnamon, cumin, garlic salt, allspice, pepper, cayenne, cloves, bay leaves, beef (do not brown first) and 2 cups water. Mix until combined.
Cover and simmer for 2 hours over medium-low heat. Stir in the vinegar and simmer for another 30 minutes. Then remove bay leaves.
Serve Chili on a bed of spaghetti topped with the beans, onions and a mound of cheese (or your preferred combination).
Optionally, add hot sauce &/or Oyster Crackers.
Notes
Recipe may be proportionately adjusted if you use more or less beef.Adjust the spiciness (heat) to your liking. A half tsp. of cayenne is normal for 2 Lbs. of beef.This is also a great topping for hotdogs or burgers.Ordering Nomenclature:
