INGREDIENTS
8oz.Large Elbow Macaroni
2Eggs - Hard Boiled
1cupMayonnaise
1cupCelery - thinly sliced
1cupGreen and Red Bell Pepper - chopped small
¼cupOnion - finely chopped
2Tbsp.Vinegar
1Tbsp.Dijon Mustard
1tsp.Sugar
1tsp.Salt
¼tsp.Black Pepper
INSTRUCTIONS
Cook macaroni according to package directions; drain and rinse with cold water until completely cool.
Hard Boil Eggs, peel, and chop into bite-sized pieces. Set aside.
In a large bowl, combine Mayonnaise, Vinegar, Mustard, Sugar, Salt and Pepper.
Stir in Macaroni, Celery, Green/Red Pepper, Eggs and Onion.
Serve chilled.
Notes
Terrific with either regular or light Mayo.You may use any of your favorite Pastas. Traditionally, this is made with regular-size Elbows. It even works with gnocchi.
