Breaded Cheese Sticks

Fabulous Breaded Cheese Sticks with a crispy Potato Panko crust that will disappear in a flash.

Equipment

  • Baking Sheet and Parchment Paper for baking
  • Lg. Skillet for frying

INGREDIENTS 

  • 3 Russet Potatoes - cooked and cubed
  • ¼ cup Green Onions - finely diced
  • ¼ cup Bacon - finely diced
  • ½ cup Sour Cream
  • 1 tsp. Salt
  • ½ tsp. Black Pepper
  • 1 lb. Cheddar Cheese - cut into 1/4-inch thick strips
  • AP Flour - as needed for dredging
  • Egg - beaten, as needed for dredging
  • cup Cornstarch
  • 1 cup Panko Breadcrumbs
  • 4 cups EVOO

INSTRUCTIONS

  • Combine the cooked Potatoes, Green Onions, Sour Cream, Salt, Pepper, and Bacon in a bowl. Mash until mostly smooth with a few small chunks.
  • Slice the Cheddar block into 1/4-inch thick strips.
  • Scoop a spoonful of Potato mixture into your hand, flatten it, place a cheese strip in the center, and mold the potato around it to form a sealed stick.
  • Prepare three bowls: one with Flour, one with beaten Egg, and one with Cornstarch mixed with Panko.
  • Coat each Potato Stick in Flour, dip in Egg, then roll in the Cornstarch-Panko mixture.
  • Heat Oil in a deep fryer or heavy pot to 350°F.
  • Fry the coated sticks in batches for about 3 minutes, until crisp and golden. Transfer to paper towels and sprinkle lightly with salt.
  • Let cool before serving. The Cheese inside will be very hot

Notes

To bake instead, preheat oven to 400°F.   Place coated sticks on a parchment-lined sheet, drizzle lightly with EVOO, and bake 15 minutes or until golden.
