Smothered Pork Chops
Tender, juicy Pork Chops layered on creamy, cheesy Scalloped Potatoes.Difficulty: Easy

Equipment
- 1 9" Sq. Glass Casserole
- 1 Medium Frying Pan
INGREDIENTS
- 4 Pork Chops - ~1" thick, bone-in
- Salt and Pepper - to taste
- 1 Tbsp. Vegetable Oil
- 1 Lg. Onion - thinly sliced
- 3 cloves Garlic - minced
- 3 Tbsp. AP Flour
- 1 ½ cups Milk
- 1 cup Chicken Broth
- 2 lbs. Russet Potatoes - thinly sliced
- 1 cup Cheddar Cheese - Mild, shredded
- 1 tsp. Paprika
- Fresh Parsley - chopped (for garnish)
INSTRUCTIONS
- Preheat oven to 350°F.
- Season Pork Chops on both sides with Salt and Pepper.
- Heat Oil in a large skillet over medium-high heat. Brown the Pork Chops on both sides. Remove and set aside.
- In the same skillet, reduce heat to medium and sauté Onions and Garlic until translucent.
- Sprinkle Flour over the Onion mixture, stirring constantly to create a roux.
- Gradually add Milk and then Chicken Broth, stirring until the sauce thickens. Remove from heat.
- In a large casserole dish, layer half the sliced Potatoes. Then pour half the onion sauce over the Potatoes and sprinkle with half the Cheese.
- Repeat with remaining Potatoes, sauce, and Cheese. Sprinkle Paprika on top.
- Place browned Pork Chops on the casserole. Spoon some of the sauce over the Chops. Cover with foil and bake for 1 hour.
- Remove foil and bake for an additional 15-20 minutes until Pork is fully cooked (165°F) and Potatoes are fork tender.
- Allow the casserole rest for 10 minutes. Garnish with fresh parsley before serving
Notes
Potatoes are Fork Tender when a slice can be easily pierced with a fork yet still retain its shape.
