Servings 5
Equipment
- 9" x 13" Glass Casserole
- Medium Mixing Bowl
INGREDIENTS
Protein
- 3 lg B/S Chicken Breasts - (or optionally, Thighs)
- 7 slices Thick-cut Bacon
Sauce
- ½ cup Butter - melted
- ½ cup Grated Parmesan Cheese
- 1 tsp. Garlic Powder
- ½ tsp. Onion Salt
- ¼ tsp. Fresh Ground Black Pepper
Seasoning
- 1 Tbsp. EVOO
- 1 tsp. Paprika
- 1 tsp. Garlic Powder
- 1 tsp. Onion Powder
- Salt - to taste
- Black Pepper - to taste
INSTRUCTIONS
- Preheat the oven to 350°F.
Make Sauce
- Melt Butter in the microwave in a Medium bowl. Not too hot, just melted.
- Add the rest if the ingredients, and whisk until well blended.
Prep Chicken
- Slice each chicken breast lengthwise into tender-like strips. Drizzle with olive oil to coat evenly. Season all sides with Paprika, Garlic Powder, Onion Powder, Salt, and Pepper.
- Wrap each strip with bacon, using just enough to wrap each tender end to end with minimal overlap.
- Make sure the ends are secured beneath as you arrange the wrapped chicken pieces in a 9 x 13 casserole dish.
- Drizzle sauce evenly on all tenders and use a pastry brush to make sure there is complete coverage.
- Put the dish on the center rack of the oven and bake for 25 to 30 minutes, or until chicken reaches an internal temperature of 160°F.
- Do NOT overcook. This will dry out the Chicken and may burn the Bacon.
- Transfer the chicken to serving plates and serve warm.
Notes
This Sauce above makes an excellent Dipping Sauce for Wings, etc.
For crispy bacon, broil the chicken for an extra 2 to 3 minutes. Watch that they don’t burn.
Substitute Regular sliced Bacon but reduce baking time and be sure Chicken reaches 160°F internal temp. You may also substitute Turkey Bacon.
